Roasted Salsa

Roasted Green Chili Mexican Salsa

Lets make a 32oz portion!

Ingredients:

California Long Chili (at least 6)
Jalapenos (at least 4)
Whole Tomatoes (3) or one 10-14oz can of peeled tomatoes
2 whole garlic cloves or 1Tbl spoon of garlic salt
1/2 Tbl spoon of lemon pepper
1/2 squeeze of lime
1/2 a bundle or cilantro (trimmed )
Pinch of salt and pepper

Lets Roast some chili! you need an open flame or heavy heat to get these babies going! Roast your Cali chilies and your jalapenos and your whole tomatoes until all sides have a good char to them. have an ice bath ready to soak your charred chilies to shock them making it easier to peel of the skin. once peeled set them in your blender or Cuisinart along with your cilantro and garlic cloves. the texture of the salsa is up to you! a couple of taps for a chunky base or if you want a more smooth based salsa simply give it more time. Once your done, transfer your salsa to a mixing bowl so you can add your squeeze of lime and salts and your salsa is pretty much done!
